Crispy Mushroom Ricotta Scramble
If you haven’t tried ricotta scrambled eggs, you need to. The ricotta adds a fluffier creamier texture to the eggs as well as some extra protein. The addition of the crispy mushrooms took it to another level and the kitchen actually smelled like I had made steak and eggs. I used the Aglio Olio seasoning from Trader Joes on the mushrooms but if you can’t find that you can use a big pinch of herb salt or I will give you a herb mix substitute to use.
Ingredients:
1 pint mushrooms cleaned and sliced or torn into small pieces
1-2 tbsp olive oil
1 tsp Aglio Olio spice mix or see below for alternate spice mix.
6 eggs
pinch of salt
1/4 cup whole milk ricotta
optional- chopped chives for topping or drizzle of chimichurri
Recipe:
In a frying pan over medium heat, add the olive oil, mushrooms and seasoning mix. Stir to coat and fry the mushrooms until they are browned and starting to get crispy. This takes about 5-10 minutes depending on the size of your pan.
While the mushrooms are frying, add the eggs to a bowl with the pinch of salt and whisk until they are pale yellow color. Then add the ricotta and whisk again to combine.
Remove the crispy mushrooms from the pan and turn the heat to low. Add a little more oil and then pour in the egg mixture. Use a spatula to scramble the eggs. I like to let the eggs sit in the pan without disturbing for a few minutes then starting in the center, I use my spatula to scrap the bottom of the pan in little circles to start to form curds and move the cooked egg off the bottom of the pan allowing the liquid egg to settle back to the bottom to cook. Then scrap along the edges of the pan to bring the eggs back to the heat source. Keep stirring and scraping until almost all the liquid egg is cooked then turn off the heat and add the crispy mushrooms back in. Fold in the mushrooms and then allow the eggs to set for a minute or 2 before serving.
I like to serve over a slice of toast. So while the eggs are cooling a bit, toast your favorite bread or bagel. Serve the eggs over the toast and top with a sprinkle of fresh chives or a drizzle of chimichurri sauce.
If you want to make a herb mix similar to the Trader Joes mix: combine 1 tsp of red pepper flakes, 2 tsp dried parsley, 1 tsp minced garlic, 1/2 tsp salt. Then just add 1 tsp of this mix to the mushrooms.
