Maple Roasted Radishes with Crispy Greens

If you aren't growing radishes, you need to start. They are easy to grow and mature very fast, making them a very satisfying vegetable to grow. They are highly nutritious and very low in calories as well as high in fiber making them a great thing for all of us to incorporate into our diets. They even contain natural nitrates which helps improve blood flow and possibly lower blood pressure. I am not suggesting you skip your blood pressure meds for a couple of radishes but every little bit helps, right? I personally prefer french radishes which are more mild in flavor, but if you are still not a fan, you need to try this recipe. Roasting the radishes mellows out the flavor and the sweet and salty combination make them an amazing snack. Plus it’s all about the crispy greens which are my favorite part. Ingredients:

Assorted Radishes with their greens

2-3 tbsp oil, I use organic sunflower oil but olive oil also works well

generous pinch of fine sea salt for roasting (I prefer herb salt)

2-3 tbsp maple syrup

Flaky salt for finishing at the end.

Recipe:

  1. Preheat the oven to 425 F.

  2. Wash the radishes and trim off the ends if you wish. Make sure to dry the greens completely. If they are wet, they will steam in the oven instead of getting crispy.

  3. Arrange the radishes on a lined baking tray. Make sure not to crowd them because again, we want crispy greens. If there are too many on a tray, the greens will steam.

  4. Drizzle over the oil and fine sea salt. I use my herb salt but regular salt works well. Massage the oil and salt into the greens a bit.

  5. Roast for 10-12 minutes. You should see that the greens are starting to get crispy but not burned. The radishes with be tender.

  6. Remove from the oven and drizzle the maple syrup over all the radishes and greens. Replace the tray back into the oven for another 3-5 minutes. Keep an eye on them because we do not want the greens to burn.

  7. After removing from the oven the second time, transfer the radishes to a serving dish and sprinkle with Flaky Salt(paid link).
