Sesame Scallion Stuffed Eggs
If you are a fan of stuffed eggs or deviled eggs but are looking to mix it up, this recipe is the one for you. Or if you can’t bring yourself to eat just plain hard boiled eggs, this is an easy way to dress them up. Spring tends to be the time of year that stuffed eggs are popular but this one doesn’t scream Easter buffet so give it a try any time of year. We enjoyed it served with this light salad. I will list the quick dressing recipe at the bottom if you want to serve it this way. I could suggest adding some sliced chicken or tofu for a delicious protein packed meal as well!
Ingredients:
6 hard boiled eggs
2 tbsp toasted sesame oil
2 tbsp seasoned rice wine vinegar
1 tbsp sriracha sauce
2 scallions finely sliced greens and whites
1-2 tbsp sesame seeds for topping, I like a mix of black and whites sesames
Recipe:
I recommend boiling eggs ahead of time and making sure they are chilled before peeling and slicing. I like to start my hard boiled eggs in a pan with cold water and bring to a boil for 3 minutes then turn off the heat and cover. Allow the eggs to sit until the water is warm to touch (about 10 minutes). Then drain off the warm water and fill the pan with cold water and handful of ice to start to chill the eggs. I will store in the fridge before making the stuffed eggs. Ideally overnight.
Slice the eggs in half, drop the yolks into a bowl and add the sesame oil, vinegar, sriracha and mix well until it is creamy, bright yellow and there are no lumps of yolk. Then add 2/3 of the scallions and fold them in. Reserve the rest of the scallions for topping.
Drop about a tbsp of the mixture in each half egg white. Then top with the remaining scallions and the sesame seeds.
Sesame Dressing:
1 tbsp sesame seeds
1 tbsp toasted sesame seed oil
3 tbsp seasoned rice wine vinegar
2 tbsp agave syrup or honey or maple syrup
1 tbsp dark soy sauce
I like to combine the ingredients in a jar and shake to combine. Then spoon over torn lettuce and add some cherry tomatoes and 3-4 of the stuffed eggs over top.
