Sun Dried Tomato BLT

Sometimes you just want what you want. It’s not summer and tomatoes are not in season but I was craving a BLT so this sandwich is it. I could also sub the sun dried tomato spread for some tomato jam, but I didn’t have that either and I believe sun dried tomatoes in oil are fairly easy to find. It’s salty, savory and delicious. If you don’t have micro greens, just sub in some baby greens salad mix and feel free to omit the sprouts if you don’t have them or don’t like them. I recently experimented with growing my own sprouts on y counter top at home so I had some on hand.

Ingredients:

Seitan Bacon (Upton’s Seitan Bacon is my favorite) or your favorite vegan bacon or if you eat bacon just use your favorite bacon

Crusty bread- I’m using my homemade sourdough but your favorite crusty bread cut into thick slices will work

Greens- micro greens if you grow your own or a standard salad mix from the grocery store

1/4 cup mayo/dressing spread (I like Hellmann’s Vegan dressing spread)

Sun dried tomatoes preserved in oil

Sprouts (optional)

Recipe:

  1. Fry the bacon according to the package directions. If using seitan bacon I will add a tablespoon or two to the pan before frying to help it crisp and to prevent sticking.

  2. Prepare the sun dried tomato spread. combine 1/4 cup mayo with 6-8 sun dried tomatoes and blend until smooth. Set aside.

  3. Slice and toast the bread.

  4. Slather both sides of the bread with the spread, add the greens to one side and sprouts to the other. Top one side with 4-5 slices of bacon. Top with the other slice and enjoy!

So easy. It hardly qualifies as a recipe. I highly encourage you to grow a try of micro greens or salad greens in a window sill at your home. Since I grow the greens and sprouts and make my own bread, I only had to go out of my way to buy the seitan bacon and sun dried tomatoes. It makes this an affordable sandwich to make on a Sunday afternoon for a special lunch.
