Caramelized Onion Goat Cheese Souffle

Souffle is a dish I have recently acquired into my collection of favorite recipes. Since we raise our own chickens, we do have an abundance of eggs at times so I wanted to master some more sophisticated egg dishes other than quiche, frittata etc. A simple cheese souffle is lovely and elegant but I thought why not use another ingredient I have a lot of this year, onions! Who does’t love caramelized onions? It was a match made in heaven.

Ingredients:

2 tbsp butter

3 tbsp olive oil

3 tbsp flour

3/4 cup milk

4 oz goat cheese

1 large onion thinly sliced

2 tbsp olive oil

4 egg yolks

4 egg whites whipped

2-3 tbsp grated parmesan for coating the souffle dish

Recipe:

  1. Preheat the oven to 350 F. Butter the sides of a 2 qt souffle dish or a deep dish with straight sides with 2 tbsp butter. Dust the buttered dish with the grated parmesan cheese and set aside.

  2. In a medium sauce pan, saute the thinly sliced onions with olive oil over medium heat. Keep an eye on the onions to make sure they don’t burn. If you need to, add a tbsp of water to keep the onions cooking without browning. Once they start to turn a soft caramel color and appear almost jammy, turn off the heat but leave the onions in the sauce pan.

  3. Separate the eggs. Egg whites should go into the bowl of a stand mixer or into a medium mixing bowl and whip the egg whites till stiff. Set aside.

  4. In the medium sauce pan, add the 3 tbsp of flour to the onions. Whisk continuously and cook for about a minute before adding the milk. Continue to whisk over medium heat while the liquid thickens about 3-4 minutes. Then turn off the heat and add in the goat cheese and mix to combine.

  5. Add the egg yolks into the sauce pan and stir until it is a silky smooth mixture. Fold the yolk mixture into the mixing bowl with the egg whites. Try not to deflate the whites but make the mixture is well combined.

  6. Pour the contents of the mixing bowl into the prepared souffle dish. Bake at 350 F for 30-35 minutes. It will be puffed and golden on top.

This is an elegant dish that is honestly easy to make. I like to serve it with a light salad. Just greens with a quick vinaigrette. Pair with your favorite bottle of wine and you have a very delicious dinner party or date night meal.
