Sweet and Salty Popcorn Brittle

I am a big fan of sweet and salty combinations. If you are the person who hunts down the kettle corn at the fair, you will likely enjoy this idea. I call it an idea because I made the whole snack using the microwave and you can use this as a jumping off point to customize whatever popcorn brittle you want. I used peanut butter chips and mini M&Ms but peanuts wound be great or mini chocolate chips. I honestly would just eat the popcorn with the sweet and salty butter syrup alone. It is a bit messy so enjoy with some napkins. This is perfect to make for a fun movie party or to set out for guests as a sweet treat. If you have kids, they will enjoy picking out the candies and can easily help make the brittle. You will definitely want to share because it makes a lot.

Ingredients:

To make the Sweet and Salty Butter Syrup:

1/4 cup sugar

3-4 tbsp butter ( I like Trader Joes Vegan Butter but whatever butter you have will work)

1 tsp salt

Put all 3 ingredients in a micowave safe bowl and pulse cook for 30-60s seconds at a time stirring in between. We want it to almost look like a butter colored simple syrup. It should be light yellow and the consistency of maple syrup. Don’t over cook it because we don’t want it to burn in the microwave. You could use the stove top stirring over low heat but if you have access to a microwave, it is easier.

1/2 cup chocolate chips-melted

Again, I use my microwave to melt chocolate. I will use a microwave safe bowl and pulse the chocolate chips. First for 1 minute then stir then cook again 30 sec at a time stirring in between. It will likely take about 2 minutes to get a loose drizzly consistency. Be careful not to burn the chocolate.

1/2-1 cup of your favort candies or nuts. I used a combination of 1/2 cup peanut butter chips and 1/2 cup mini M&Ms pictured above. But peanuts, pretzels, chocolate chips, mini marshmallows, candy corn would all work. Pick what you like.

10 cups of air popped popcorn. I use a Chef n Pop Microwave popcorn maker that I have had for many years and works really well.

Recipe:

  1. Pop the popcorn and set aside in a large mixing bowl. Make sure that you are not incorporating any seeds. I recommend scooping the popcorn from the top of whatever container you used to make the popcorn. (ie, If you used a pot, scoop the popcorn from the top of the pot allowing the seeds to stay at the bottom. Don’t dump the butter syrup on the popcorn in the popping pot.)

  2. Add the sweet and salty butter syrup to the popcorn and stir to coat. Then add your cup of nuts or candy and stir again.

  3. Spread evenly on a lined sheet tray. Try to have one even layer.

  4. Then Drizzle the melted chocolate over the top. Try to have a fine drizzle over the top of all the popcorn.

  5. Allow to cool completely before breaking apart. You can let it sit out to cool on the counter or use the fridge to speed the process if your movie party is about to start:)
